Our beautiful family started our “GRAND RISING” with scrumptious and savory waffles. Waffles are the kids favorite breakfast dish as well as mines. Remarkably, I go back to the time when I was a young girl, waking up to an amazing, sweet mouthwatering aroma floating in the air. It would carry me directly toward the kitchen. On those beautiful rising I did not mind being woken up so early nor cared about what I had to do for that day. I suppose that feeling or experience may be the same for the kids and besides it’s better than the #wafflehouse in my opinion. It was always a great way to start my day. But here is the list of ingredients we used to make these tasty waffles:
Ingredients:
- 1 & 2/3 cups waffle mix
- 1 & 1/3 cups of walnut milk
- 2 tbsp soaked flax seeds
- 2 tbsp date sugar
Cooking Instructions:
- Heat waffle maker
- Pour the waffle mix, milk, soaked flax seeds, and the date sugar into a mixing bowl
- Stir mixture with a fork or wire whisk until smooth
- Then transfer mixture onto center of the greased waffle maker
- Bake about 5 minutes or until steaming stops
- Remove CAREFULLY

For lunch we had vegan tacos with a chickpea side salad. This was my first time eating a vegan taco. I use to look forward to driving to #TacoBell on my “Taco Tuesday” days, to order about 4 tacos. And if you knew the OLD me, you knew I use to indulge in #TacoBell. Surprisingly eating the vegan taco was delightful, not knowing what to expect but willfully feeling a sense of satisfaction. It was like an instant shock ran up and down and through and through my taste buds. It only takes a few natural ingredients to prepare.
Ingredients:
- 1 can chickpeas
- 1 can pinto beans
- 2 cups brown rice
- lettuce
- 1 sliced avocado
- 1 whole diced tomatoes
- 1 cup shredded vegan cheese
- 2 vegan wraps
- YOUR CHOICE OF SALSA
How to make:
- Warm the wrap on both sides
- Place vegan wrap on a flat surface
- Add the lettuce to the center of the wrap
- Then place a spoonful of the cooked rice onto the bed of lettuce
- Then add the pinto beans on top of the rice
- Add the sliced avocado, tomatoes and then sprinkle the shredded vegan cheese on top
- Fold one end and roll it down the center then close the other end like a burrito
- That’s how we made our vegan soft taco!
The chickpeas were sauteed and lightly seasoned and placed on a bed of spring mix lettuce. I used our homemade vegan ranch dressing (see how we made it on YouTube) and a little dash of red wine mixed with balsamic vinegar for dressing.
The last but not less main event was the vegan veggie burger for dinner. The way this burger looks in the photo above this page speaks for itself. It was fresh, robust, juicy smokey and tangy at the same time. Not to mention the flaky, crispy crunchy edges. The appearance of this veggie burger will have wanting more. If I had to choose this veggie burger over #Fiveguys, I would choose the healthy, full-feeling, delicious vegan veggie burger. Here is a list of the ingredient we used to make the veggie burger:
Ingredients:
- 1 can black beans
- 2 1/2 cups plain breadcrumbs( save 1/2 for coating)
- 1 cup whole wheat breadcrumbs
- 1 1/3 nutritional yeast
- 3 tbsp soaked flax seeds
- 1 tbsp olive oil
- 1 tbsp black pepper
- 1 tbsp complete seasoning
- 1 tbsp sea moss
- 1 tsp liquid smoke
- 1 tsp pink salt
- 1 tsp bladderwrack
- 1 tsp italian seasoning
- 1 tsp old bay
- 2 tsp garlic powder
- 1 tsp onion powder
- 2 tsp garlic minced
- 10 walnuts
- 2 whole diced zucchini
- 4 carrots
- 1 whole diced onion
- 3 celery stalk
- 2 cups brown rice
- 5 cups of water (amount varies on needed bases)
How to make it:
- Cut all the veggies into diced pieces
- Place olive oil in a pan on medium heat
- Then add the veggies to pan and saute for 7-10 minutes or until tender
- Add all the seasoning at this time (black pepper, pink salt, complete, italian, garlic powder, onion powder, old bay and bladderwrack)
- Mix together with the sea moss
- Add water as needed
- Make sure you mixed the seasoning very well
- Put 12 cups of water into another pot and when it begins to boil
- Add 2 cups of brown rice let it boil on high for 30 minutes
- Pour rice into a strainer to remove excess water and place it back into the original pot and let sit for 10 minutes with lid on away from heat.
- Drain & rinse the can of black beans and place in the oven over parchment paper (if you have it)
- Bake for 10 minutes on 425 degrees and then remove them from oven
- Place walnuts into the food processor and the add the veggie mix and the dried out black beans
- Add the soaked flax seeds and 2 cups of rice
- Mix it evenly but leave some chucks
- Put mixture into a mixing bowl and add all the 3 types of breadcrumbs and yeast the mix
- Make sure you mix it up well
- You can use your hands to mix it
- Start forming the burgers or patties together
- Then grab a plate and place the plain breadcrumbs on it and coat both sides of patty with breadcrumbs and cover completely
- Place them on a heated skillet for 3-5 minutes on both side
- When done put the burgers on a baking sheet and place shredded cheese( slice cheese will be fine as well) on top until the cheese melt , 5- 10 minutes on 425 degrees
- Take out the oven and dress that burger up how you like it
