“Trio Snack Grabber”
Ingredients
- 1 lb Zucchini
- 1 lb Carrot
- 4 ribs Celery
- 1 bg Sweet Potatoes Fries
- 1 cup Chips (Capecod plain)
- 1 tsp Orengo
- 1 tsp Sage
- 1 tsp Rosemary
- 1 tsp Thyme
- pinch Salt
- pinch Pepper
- 2 tbsp Coconut Oil
- Cream Cheese w/ chives,
- Hummus
- (Homemade) Spinach & Artichoke
- Salsa
Instructions
- Preheat the oven to 425oF
- Peel and slice all the vegetables
- In a bowl combined coconut oil with herbs & seasonings (Orengo, Sage, Rosemary, Thyme and Salt & Pepper) mix well
- Transfer the veggies on a baking tray lined parchment paper
- Arrange the sweet potatoes fries on the baking tray so none are overlapping
- Place sweet potatoes fries & Veggies in oven for 20 – 35 mins (or to your liking)
- Flip veggies over half way
- Remove when the edges or corners turn golden and crispy
- Now you can plate it and enjoy it with your choice of dip.
