"Trio Snack Grabber"

Ingredients
  

  • 1 lb Zucchini
  • 1 lb Carrot
  • 4 ribs Celery
  • 1 bg Sweet Potatoes Fries
  • 1 cup Chips (Capecod plain)
  • 1 tsp Orengo
  • 1 tsp Sage
  • 1 tsp Rosemary
  • 1 tsp Thyme
  • pinch Salt
  • pinch Pepper
  • 2 tbsp Coconut Oil
  • Cream Cheese w/ chives,
  • Hummus
  • (Homemade) Spinach & Artichoke
  • Salsa

Instructions
 

  • Preheat the oven to 425oF
  • Peel and slice all the vegetables
  • In a bowl combined coconut oil with herbs & seasonings (Orengo, Sage, Rosemary, Thyme and Salt & Pepper) mix well
  • Transfer the veggies on a baking tray lined parchment paper
  • Arrange the sweet potatoes fries on the baking tray so none are overlapping
  • Place sweet potatoes fries & Veggies in oven for 20 - 35 mins (or to your liking)
  • Flip veggies over half way
  • Remove when the edges or corners turn golden and crispy
  • Now you can plate it and enjoy it with your choice of dip.
